A lot of us will have a choice to make, how do you decide? Well here is my perspective on the subject. It is one thing to be a cook, but how do you make that into something that will pay the bills for the long term. When you first start out you are not making a good deal of money, and you are working your butt off to climb the ladder. When do you decide to make the leap to that next level? I think it is the toughest part of the business, the departure of being a Cook to Chef and then to Executive Chef. There is no road map for this and I want us to talk about it.
We need to look out for each other in this business because if we do not look out for ourselves no one else will.
As usual, this is just my perspective or opinion. I would like to hear yours as well.
