We've been harvesting a lot of peppers recently and the one variety that we really never know what to do with is the banana peppers. Over the past week or so we've harvested just over a pound of awesome looking banana peppers. We did a quick internet search and found a good recipe for pickled banana peppers that can be kept in your refrigerator for up to 3 months or preserved through traditional canning methods.
