this was soo good!!!! omg the best cheesecake i've ever made.
I'm making these again for Christmas day & going to mix speculoos & gingersnap cookies for the crust
SWEET POTATOES & APPLES:

Tried & true - have made every year for several years!!
Person who originally uploaded recipe deleted it!!! So here it is:
2 large or 4 small sweet potatoes, peeled and diced
2 Granny Smith apples, diced
1 cup brown sugar
1/2 cup non-dairy shortening
1 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1 cup walnuts or pecans
Preheat oven to 350.
Steam sweet potatoes for 10 min. or until slightly tender.
In a sauce pan, combine remaining ingredients, except nuts.
Boil for at least 1 minute, then add nuts & boil for another minute.
Pour sauce over cut-up apples & sweet potatoes & mix well.
Bake for 45 minutes uncovered.
SCALLOPED POTATOES:

Also amazing & would recommend.
Next time I will mix the casserole together in a bowl or big pot first then scoop into the baking dish. Also will put chives on top :-)

Honestly you can use whatever filling you want - I just recommend making a wreath of something because it's easy to do & looks fun & festive
Use this pesto & just swap the cheese for nutritional yeast! super easy
Mine ended up tasting very pizza-y which was good
CARROTS & ASPARAGUS:

I just included asparagus for some variety, but these were good! Nothing crazy or anything just some nice veg
MEATBALLS:
3/5
I could smell/taste the untapped potential here. These would've been great if I left out the brown sugar or at least started adding it little by little. TOO SWEET but will try again!
