Notes:
1. Marinate the chicken with the spices for 30 minutes.
2. Soak the basmati rice in water for 15 minutes before adding to pressure cooker.
3. Cook the chicken halfway through (about 50%) only.
Ingredients:
For marination:
Chicken - 1 kg (Bone-in thigh & leg)
Red Chilli powder - 1 spoon
Turmeric powder - 1/2 tsp
Garam masala - 1/2 tsp
Curd/Yogurt - 1/2 cup
Salt - as required/to taste
For Biriyani masala:
Ghee - 2 spoons
Fennel seeds - 1 spoon
Cardamoms - 2
Cloves - 2
Cinnamon sticks - 2
Star Anise - 1
Large Onions - 2, sliced
Garlic - 7 bulbs
Ginger - 1 inch, chopped
Green chillies - 5
Tomato - 2
Coriander & Mint leaves - handful
For Biriyani:
Ghee - 4 spoons
Cinnamon sticks - 2
Cardamoms - 2
Cloves - 2
Star Anise - 1
Fennel seeds - 1 spoon
Bay leaves - 2
Cashews - 10 to 15
Large Onions - 3, sliced
Salt - as required/to taste
Coconut milk - 1 cup
Water - 2 cups
Basmati rice - 750g (soak in water for 15 minutes)
Coriander - to garnish
