Server population is one of the most important factors to consider when choosing your realm in Classic WoW. If you choose the low population realm, you might end up not being able to find dungeon groups and raid groups. On the other hand, if you choose a high-populated Classic WoW server, you might end up being stuck in the queue every time a new phase or content comes out.
Unfortunately, Blizzard does not want to publish the data on Classic WoW Realms Populations, and many Classic Population databases do not accurately portray the real statistics. However, Ironforge to me seems like a pretty trustworthy resource, that I would recommend if you want to know the population on your server.
Also, faction balance / faction imbalance is crucial for world pvp and the overall enjoyment of vanilla wow experience. Whether you choose Alliance or Horde, if the server you're on has much bigger number of the opposite faction players, you gonna have a very hard time outside in contested zones.
